Wash and clean the sarson leaves and chop them finely.
Heat ghee in a pan and add cumin seeds. Once they start to crackle, add the chopped onions and sauté until they turn golden brown.
Add the garlic, ginger and green chillies and sauté for a few minutes.
Add the chopped tomatoes and cook until they are soft and mushy.
Add the chopped sarson leaves and mix well. Cover and cook for 10-15 minutes on low heat.
Add the coriander powder, red chilli powder, garam masala and salt to taste. Mix well and cook for a few more minutes.
Serve hot with makki ki roti or paratha.
