Heat the ghee in a large pot over medium heat.
Add the cumin seeds and let them sizzle for a few seconds.
Add the chopped onion and sauté until it is golden brown.
Add the garlic and ginger and sauté for a few more minutes.
Add the mustard greens and stir to combine.
Add the coriander powder, turmeric powder, red chili powder, garam masala, amchur powder, and jaggery.
Stir to combine and let the mixture cook for about 10 minutes, stirring occasionally.
Add salt to taste and stir to combine.
Cover the pot and let the mixture simmer for about 20 minutes, stirring occasionally.
Serve hot with roti or paratha. Enjoy!
