Sambar Vada is made with a combination of lentils and spices. It is a deep-fried snack made from a batter of soaked and ground lentils, usually urad dal, and spices. To make the sambar, soak the toor dal in water for about an hour.
Heat oil in a pan and add the mustard seeds and cumin seeds.
When the seeds start to splutter, add the chopped onion and green chillies.
Fry until the onion turns golden brown.
Add the chopped tomatoes and fry for a few minutes.
Add the turmeric powder, red chilli powder and salt.
Add the soaked toor dal and mix well.
Add enough water and bring it to a boil.
Simmer for about 10 minutes or until the dal is cooked.
Add the tamarind paste and mix well.
Simmer for a few more minutes and then add the chopped coriander leaves.
Remove from heat and keep aside.
To make the vada, soak the urad dal in water for about an hour.
Drain the water and grind the dal to a coarse paste.
Add the chopped onion, green chillies, coriander leaves and salt.
Mix well and make small balls out of the mixture.
Heat oil in a pan and deep fry the vadas until golden brown.
Serve the sambar vada hot with chutney or sambar.
