Soak the toor dal and rice separately for 30 minutes. Cook the rice in water and keep aside.
Heat oil in a pressure cooker. Add mustard seeds, cumin seeds, urad dal, chana dal, fenugreek seeds, dried red chillies and asafoetida.
Add the chopped onion and sauté until it turns golden brown.
Add the chopped tomatoes, green chillies, ginger-garlic paste, coriander powder, red chilli powder, garam masala and salt. Sauté for a few minutes.
Add the soaked toor dal and mix well.
Add the tamarind paste and jaggery and mix well.
Add 2 cups of water and pressure cook for 3-4 whistles.
Once the pressure is released, open the lid and stir the sambar.
Garnish with coriander leaves and serve hot with the cooked rice.
