Sambar masala powder is a spice blend used to make South Indian dish Sambar, a lentil-based vegetable stew or chowder. Made with a host of spices like coriander seeds, cumin seeds, fenugreek seeds, mustard seeds among others, sambar masala gives any dish a quick revamp. It is not just essential to the sambar recipe, but it can also be used to up your stir fry, dal and curries. It can be made at home and stored for months.

Dry roast all the ingredients separately on a low flame until they turn slightly brown. Make sure not to burn the spices.
After the ingredients have cooled down, add them to a grinder along with the turmeric powder and asafoetida.
Grind all the ingredients to make a fine powder.
Store the sambar masala in an airtight container.
