Heat oil in a pan and add all the dals, peanuts, sesame seeds, coriander seeds, cumin seeds, fenugreek seeds, curry leaves, tamarind paste, jaggery, grated coconut, chopped onion, chopped tomato, chopped green chillies, chopped ginger, chopped garlic and chopped coriander leaves.
Fry the ingredients until they are golden brown.
Add the idli batter and mix well.
Add salt to taste and mix well.
Grease the idli moulds with oil and pour the batter into the moulds.
Steam the idlis for 10-15 minutes.
Serve the sambar idlis hot with chutney or sambar.
