Soak the sabudana in enough water for at least 4 hours or overnight.
Drain the sabudana and spread it on a kitchen towel to remove any excess water.
In a bowl, mix together the sabudana, mashed potatoes, peanuts, green chillies, cumin seeds, ginger, coriander leaves and salt.
Divide the mixture into 8-10 equal portions and shape them into flat, round patties.
Heat oil in a deep frying pan over medium heat.
Fry the patties in batches until golden brown and crisp.
Drain on absorbent paper and serve hot with chutney or ketchup.
