Sabudana Khichdi is an Indian dish made of soaked tapioca pearls, potatoes, peanuts, and spices. The tapioca pearls or sabudana, give the dish its unique, slightly chewy texture while the peanuts and spices lend it a wonderful savory flavor.

Start by soaking the sabudana pearls in water overnight or for at least 4-5 hours.
Once the sabudana has soaked, drain it well and mix it with the powdered peanuts, salt, and sugar.
In a pan, heat the ghee and add cumin seeds.
Once the cumin seeds start spluttering, add green chillies and saute for a few seconds.
Follow this by adding the boiled and cubed potatoes and sauté until they turn golden brown.
Now, add the sabudana mixture to the pan and cook it on a low flame for about 5 minutes or until the sabudana pearls turn translucent.
Serve the sabudana khichdi hot, garnished with fresh coriander leaves.
