Sabudana Khichdi is a delicious and popular dish in the Indian subcontinent. Made from soaked sabudana (tapioca pearls), it is commonly consumed during fasting days especially in Maharashtra, Gujarat, and Rajasthan regions. The dish is sauteed with peanuts, potatoes, and few spices. It is easy to digest and offers a quick energy boost, therefore, it is an excellent meal option during fasting.

Soak the sabudana in water overnight or for 5-6 hours.
Drain the sabudana and keep it aside.
In a pan, heat the ghee and add cumin seeds.
When the seeds crackle, add curry leaves and green chilies, sauté for few seconds.
Add potatoes and cook until they are tender.
Mix in the soaked sabudana, crushed peanuts, sugar, and salt.
Cover the pan and cook on low flame for 5-7 minutes.
Stir occasionally.
Serve hot, garnished with chopped coriander leaves.
