Heat oil in a pan, add chopped onions and sauté until they turn golden brown.
Add the ginger garlic paste and sauté till the raw smell goes away.
Add the lamb pieces to the pan and cook until they turn brown on all sides.
Add the turmeric, chilli, coriander, cumin and garam masala powders, and stir well to coat the lamb with the spices.
Add water, cover the pan and let it simmer for about 1-2 hours until the meat is tender and the gravy is thick.
Add salt to taste and garnish with chopped coriander leaves.
Serve your delicious Rogan Josh hot with naan or rice.
