Preheat your oven to 220°C/425°F.
Rinse the fish inside and out, then pat dry with kitchen paper.
Lay the fish on a large baking tray that’s been lined with greaseproof paper.
Make 3 slashes on each side of the fish with a sharp knife, cutting down to the bone.
Squeeze the juice of one lemon over the fish, inside and out, then season with salt and pepper.
Drizzle with olive oil, ensuring the whole fish is evenly coated.
Stuff the cavity of the fish with the herbs and the other lemon, sliced.
Roast in the hot oven for 20 to 25 minutes or until the fish is cooked through and the eyes have turned white.
