Peel and cut the ridge gourds into small cubes.
Heat oil in a pan and add cumin seeds, mustard seeds and fenugreek seeds.
When the seeds start to crackle, add the ridge gourd cubes and stir-fry for a few minutes.
Add turmeric powder, red chilli powder, coriander powder, garam masala, green chillies and salt.
Cook for 10-15 minutes on low heat, stirring occasionally.
Add chopped coriander leaves and mix well.
Serve hot with chapatis or rice.
