Wash and soak the Basmati Rice for 15 minutes.
Heat Ghee and Oil in a pressure cooker.
Add Bay Leaves, Cinnamon Sticks, Cardamom Pods and Cloves.
Add Cumin Seeds and let them crackle.
Add Onion and Green Chillies and sauté until the Onion turns golden brown.
Add Ginger-Garlic Paste and sauté for a minute.
Add Mixed Vegetables and sauté for 2-3 minutes.
Add Red Chilli Powder, Garam Masala, Coriander Leaves and Salt.
Add the soaked Basmati Rice and sauté for 2 minutes.
Add Water and stir well.
Close the lid of the pressure cooker and cook for 2 whistles.
Once the pressure is released, open the lid and fluff the Rice Pulao with a fork.
Serve hot with Raita or any Curry of your choice.
