Wash and soak the rice in water for 30 minutes.
Heat the ghee in a heavy-bottomed pan and add the cardamom pods.
Add the soaked rice and fry for a few minutes.
Add the milk and bring to a boil.
Reduce the heat and simmer for 15-20 minutes, stirring occasionally.
Add the sugar and stir until it is dissolved.
Add the raisins, almonds, and pistachios and stir.
Cook for a few more minutes until the kheer is thick and creamy.
