olive oil

1 teaspoon

onion, diced


cloves garlic, minced


ripe tomatoes, diced

4 cups

vegetable broth

2 cups

fresh basil

1 cup

salt to taste

freshly ground black pepper



Step 1:

Heat the olive oil in a large pot over medium heat.

Step 2:

Add the onion and garlic and cook until softened, about 5 minutes.

Step 3:

Add the tomatoes, vegetable broth, and basil. Bring to a boil, then reduce the heat and simmer for 20 minutes.

Step 4:

Remove from the heat and let cool slightly.

Step 5:

Working in batches, transfer the soup to a blender and blend until smooth.

Step 6:

Return the soup to the pot and bring to a boil.

Step 7:

Serve hot. Enjoy!
