Heat oil in a pan over medium heat.
Add mustard seeds, fenugreek seeds and asafoetida. Fry for a few seconds until the seeds start to crackle.
Add the diced mangoes and fry for a few minutes until they start to soften.
Add the jaggery, tamarind paste, cumin powder, coriander powder, red chilli powder and turmeric powder. Mix well and cook for a few minutes.
Add salt to taste and cook for a few more minutes until the mangoes are completely cooked and the chutney has thickened.
Remove from heat and let cool.
Serve the raw mango chutney with steamed rice or roti. Enjoy!
