Rajma Tadka is a popular North Indian dish made with red kidney beans cooked in a spicy tomato-based gravy. It is usually served with steamed rice or roti. The dish is made by boiling the kidney beans until they are soft and then cooking them in a spicy gravy made with onions, tomatoes, ginger, garlic, and a variety of spices. The dish is then tempered with ghee and garlic, hence the name Rajma Tadka.

Soak the Rajma overnight in enough water.
Pressure cook the Rajma with enough water and salt for about 4-5 whistles.
Heat oil in a pan and add cumin seeds.
Once the cumin seeds start to crackle, add the chopped onions and sauté till they turn golden brown.
Add the ginger-garlic paste and sauté for a minute.
Add the chopped tomatoes and cook till they turn soft and mushy.
Add the coriander powder, turmeric powder, red chilli powder and garam masala and mix well.
Add the cooked Rajma and mix well.
Add enough water to get the desired consistency and bring it to a boil.
Simmer the flame and cook for about 10 minutes.
Add the kasuri methi and mix well.
Garnish with coriander leaves and serve hot.
