Heat oil in a pan and add mustard seeds, cumin seeds, urad dal, chana dal, fenugreek seeds and asafoetida.
When the seeds start to splutter, add the chopped radish and sauté for a few minutes.
Add the toor dal, turmeric powder, sambar powder, jaggery, tamarind paste and salt to taste.
Add 2 cups of water and bring to a boil.
Simmer for 10 minutes or until the dal is cooked.
Heat ghee in a separate pan and add mustard seeds, curry leaves and green chillies.
When the mustard seeds start to splutter, add it to the sambar and mix well.
Serve hot with steamed rice.
