In a large bowl, mix together the whole wheat flour, salt, carom seeds, cumin seeds, red chili powder, and garam masala.
Add the ghee and mix until the mixture resembles breadcrumbs.
Add the onions, coriander leaves, mint leaves, green chillies, and ginger and mix until everything is well combined.
Add enough water to make a soft dough. Knead the dough for 5-7 minutes until it is smooth and pliable.
Divide the dough into 8-10 equal portions.
Take one portion of the dough and roll it into a circle of about 6-7 inches in diameter.
Place the rolled dough on a hot tawa or griddle.
Spread some ghee on the top of the paratha.
Flip the paratha and cook on the other side until it is golden brown.
Serve hot with pickle or chutney.
