cumin seeds

1 teaspoon

mustard seeds

1 teaspoon

fenugreek seeds

1 teaspoon

turmeric powder

1 teaspoon

red chilli powder

1 teaspoon

coriander powder

1 teaspoon

garam masala

1 teaspoon

amchur powder

1 teaspoon

salt

1 teaspoon

diced pumpkin

2 cups

water

1/2 cup

chopped coriander leaves

Directions

Step 1:

Heat oil in a pan over medium heat.

Step 2:

Add cumin seeds, mustard seeds and fenugreek seeds and fry for a few seconds.

Step 3:

Add turmeric powder, red chilli powder, coriander powder, garam masala, amchur powder and salt and mix well.

Step 4:

Add diced pumpkin and mix well.

Step 5:

Add water and mix well.

Step 6:

Cover the pan and cook for 10-15 minutes or until the pumpkin is cooked.

Step 7:

Garnish with chopped coriander leaves and serve hot.
