Rinse the basmati rice under cold water until the water runs clear. Soak the rice for 20 minutes, then drain.
Heat the oil in a pan, add the onions, and sauté until golden.
If using, add the chicken to the pan and cook until brown.
Add the biryani masala and salt to the pan, and stir well.
Add the mixed vegetables and cook for a few more minutes.
Add the soaked and drained rice to the pan, and stir gently to combine.
Pour in the water, cover the pan, and let it simmer until the rice is cooked and all the water has been absorbed.
Take off the heat, let it sit for 10 minutes, then fluff the rice with a fork before serving.
