Wash and soak the basmati rice for 15-20 minutes.
In a blender, grind the mint leaves and green chillies into a fine paste.
Heat oil in a pan, add the mustard seeds and cumin seeds and let them splutter.
Add the chopped onions and saute until they turn golden brown.
Add the ginger-garlic paste and saute for a minute.
Add the mint paste, turmeric powder, and salt and mix well.
Add the rice and green peas, and saute for a couple of minutes.
Add 4 cups of water and cook on a medium flame until the rice is cooked.
Serve the pudina rice hot with raita or papad.
