Heat oil in a pan over medium heat.
Add cumin seeds, mustard seeds and fennel seeds and fry for a few seconds.

Add salt to taste and mix well.
Cover the pan and cook for 10-15 minutes or until the potatoes are cooked through.
Garnish with chopped coriander leaves and serve hot.
