Heat the oil in a large pan over medium heat.
Add the mustard seeds, cumin seeds, urad dal, and chana dal. Fry until the seeds start to splutter.
Add the turmeric powder, red chilli powder, coriander powder, and garam masala. Fry for a few seconds.
Add the cooked basmati rice and mix well.
Add the salt, freshly grated coconut, chopped coriander leaves, chopped mint leaves, chopped cashew nuts, and raisins. Mix well.
Cook for a few minutes until the rice is heated through.
Serve hot with your favorite accompaniments. Enjoy!
