Heat olive oil over medium heat and cook the minced garlic until it is fragrant.
Add the tomatoes, basil, oregano, salt, black pepper, sugar and red chili flakes.
Stir well and reduce the heat to low. Let it simmer for 30-45 minutes, stirring occasionally until the sauce thickens.
Adjust seasonings to taste.
Once cooked, allow it cool, then use as needed on your pizza bases.
