In a bowl, mix together the besan, turmeric powder, red chilli powder, cumin powder, coriander powder, garam masala, amchur powder, sugar and salt.
Heat the oil and ghee in a pan over medium heat.
Add the chopped coriander leaves, green chillies, ginger, garlic, onions, tomatoes and curry leaves.
Saute for a few minutes until the vegetables are lightly cooked.
Add the besan mixture and stir to combine.
Cook for a few minutes until the mixture is thick and cooked through.
Garnish with the chopped coriander leaves and serve hot.
