boneless, skinless chicken breasts

1/4 cup

lime juice

cloves garlic, minced

1/4 teaspoon

red pepper flakes

1/4 teaspoon

chopped fresh cilantro

1/4 cup

chopped fresh parsley

1/4 cup

diced red onion

1/2 cup

diced green bell pepper

1/2 cup

diced red bell pepper

1/2 cup

diced yellow bell pepper

1/2 cup

diced tomatoes

1/2 cup

corn kernels

1/2 cup

black beans

1/2 cup

cooked white rice

Directions

Step 1:

Preheat oven to 375°F.

Step 2:

Place chicken breasts in a baking dish.

Step 3:

In a small bowl, whisk together olive oil, lime juice, garlic, cumin, oregano, salt, black pepper, and red pepper flakes.

Step 4:

Pour the mixture over the chicken and turn to coat.

Step 5:

Bake for 25 minutes, or until chicken is cooked through.

Step 6:

Meanwhile, in a large bowl, combine cilantro, parsley, red onion, bell peppers, tomatoes, corn, black beans, and cooked rice.

Step 7:

When chicken is done, remove from oven and let cool slightly.

Step 8:

Cut chicken into cubes and add to the bowl with the vegetables and rice.

Step 9:

Toss to combine.

Step 10:

Serve warm. Enjoy!
