Peruvian cuisine is a blend of indigenous and European influences, with dishes like ceviche, lomo saltado, and aji de gallina. Ceviche is a dish of raw fish marinated in lime juice, onions, and chili peppers. Lomo saltado is a stir-fry of beef, tomatoes, onions, and French fries. Aji de gallina is a creamy chicken stew with aji amarillo peppers, olives, and hard-boiled eggs. Other popular dishes include causa, a layered potato dish, and papa a la huancaina, boiled potatoes in a spicy cheese sauce.
