Pav Bhaji is a popular Indian street food dish that originated in the state of Maharashtra. It is a vegetable curry served with a soft, buttered bread roll. The dish is made with a mixture of vegetables such as potatoes, cauliflower, peas, carrots, and bell peppers, which are cooked in a spicy tomato-based gravy. The vegetables are mashed together and served with a dollop of butter, chopped onions, and a sprinkle of coriander leaves. Pav Bhaji is usually served with a side of lemon wedges and a dollop of butter.
