Heat oil in a pan over medium heat.
Add the onions, green chillies, garlic and ginger and sauté for a few minutes until the onions are soft and lightly browned.
Add the tomatoes and cook for a few minutes until they are soft and mushy.
Add the mashed potatoes, cumin seeds, coriander powder, red chilli powder, turmeric powder and garam masala and mix well.
Cook for a few minutes until the mixture is well combined and the spices are fragrant.
Add the chopped coriander leaves and mix well.
Add the butter and mix until it is melted and combined.
Toast the pav/buns on a hot griddle or in a toaster.
Serve the pao bhaji with the toasted pav/buns.
