Paneer is a popular Indian dish made from curd cheese. This cheese is fresh and unaged, making it a fantastic cheese for cooking because it won’t melt the way that most cheeses do. Paneer can be made in the comfort of your home with just milk, lemon juice, and a bit of time on your hands. It has a mild, milky flavor with a dense crumbly texture that goes beautifully well in Indian curries or even crumbled over a salad or pasta.

Boil the milk in a heavy bottom pan.
When it starts boiling, turn off the heat and allow it to cool for a minute.
Add lemon juice and stir well. The milk should start to curdle.
Line a colander with the cheese cloth and pour the curdled milk to separate the whey and the cheese curd.
Rinse the cheese curd under cool water to remove any remaining whey and lemon juice.
Twist the cloth containing the cheese and squeeze to remove extra water.
Shape it into a flat circle and place it under a heavy weight for about 3 hours.
Your homemade paneer is ready to be used.
