Wash the spinach and chop it into small pieces.
Heat the oil in a pan and add the cumin and mustard seeds.
When the seeds start to splutter, add the turmeric, red chilli powder, coriander powder, garam masala, amchur powder, salt and sugar.
Add the garlic, onion, tomatoes and green chillies and sauté for a few minutes.
Add the chopped spinach and mix well.
Cover the pan and cook on low heat for 10 minutes, stirring occasionally.
Serve hot with chapatis or rice.
