Heat the oil in a large pan over medium heat.
Add the cumin, mustard and fenugreek seeds and fry for a few seconds until fragrant.
Add the onions and fry until golden brown.
Add the garlic, ginger and chillies and fry for a few minutes.
Add the tomatoes and fry for a few minutes until softened.
Add the spinach and fry for a few minutes until wilted.
Add the garam masala, salt and water and bring to a boil.
Reduce the heat and simmer for 10 minutes.
Serve hot with rice or chapatis.
