Pakora is a spiced fritter that is a popular evening snack, usually had with tea. It consists of eggplant, potatoes, onions or paneer coated in seasoned gram flour batter and deep fried. Its very versatile and can be made with other vegetables, meat and even edible flowers.

In a large bowl, mix together besan, red chilli powder, cumin powder, coriander powder, baking soda, ajwain and salt.
Add oil and mix well.
Gradually add water and knead into a soft dough.
Heat oil in a deep pan for deep frying.
Take small portions of the dough and shape into small balls.
Drop the balls into the hot oil and deep fry until golden brown.
Serve hot with chutney or ketchup.
