Heat the oil in a large pan over medium heat.
Add the mustard seeds, cumin seeds, and fenugreek seeds and fry for a few seconds until they start to pop.
Add the chopped onions and fry until they are golden brown.
Add the dried red chillies, garlic, turmeric, and coriander and fry for a few more minutes.
Add the tamarind paste, jaggery or brown sugar, and salt to taste.
Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally.
Remove from heat and let cool.
Transfer to a blender or food processor and blend until smooth.
Serve with your favorite dishes. Enjoy!
