olive oil

large onion, chopped

cloves garlic, minced

celery stalks, chopped

red bell pepper, chopped

zucchini, chopped

yellow squash, chopped

1 teaspoon

dried basil

1 teaspoon

Salt and pepper, to taste

Directions

Step 1:

Preheat oven to 400 degrees F.

Step 2:

In a large bowl, combine olive oil, onion, garlic, carrots, celery, bell pepper, zucchini, yellow squash, oregano, basil, salt, and pepper.

Step 3:

Spread the vegetables onto a baking sheet and roast in the preheated oven for 20-25 minutes, stirring occasionally, until vegetables are tender and lightly browned.

Step 4:

Serve warm. Enjoy!
