Neer dosa is a soft, thin, and light as air pancake made from rice batter. It is a delicacy from the Indian region of Karnataka. 'Neer' means water in Kannada and Tulu languages, reflecting the consistency of the batter. This dosa does not require any fermentation and can be made instantly with only a few basic ingredients. Being naturally gluten-free, it makes a delightful breakfast and is also suitable for people with dietary restrictions.

Ingredients

rice

water

2 cups

Directions

Step 1:

Soak the rice overnight in water.

Step 2:

Drain the water and blend the rice with a very little amount of water to a smooth paste.

Step 3:

Add 2 cups of water and salt to the paste and mix it well to create a watery consistency batter.

Step 4:

Heat a non-stick pan and pour a ladleful of batter in the centre of the pan. Spread it by tilting the pan in circular motion.

Step 5:

Cover the lid and cook it for about 2 minutes on medium flame.

Step 6:

Remove the lid and fold the dosa.

Step 7:

Serve hot neer dosa with coconut chutney or sambar.
