In a large bowl, mix together the besan, rice flour, red chilli powder, turmeric powder, cumin seeds, ajwain, asafoetida, baking soda and salt.
Add the oil and mix until the mixture resembles breadcrumbs.
Add the water and mix until the mixture forms a dough.
Knead the dough for a few minutes until it is smooth and pliable.
Divide the dough into small balls.
Heat oil in a deep pan over medium heat.
Take one ball of dough and flatten it with your hands.
Carefully drop the flattened dough into the hot oil.
Fry the namkeen until it is golden brown and crisp.
Remove the namkeen from the oil and drain on a paper towel.
Repeat the process with the remaining dough balls.
Serve the namkeen hot or store in an airtight container for later use.
