Heat oil in a pan over medium heat.
Add cumin seeds, mustard seeds and fennel seeds and let them crackle.
Add turmeric powder, red chilli powder, coriander powder, amchur powder, garam masala, sugar and salt and mix well.
Add the puffed rice and mix well.
Cook for a few minutes until the puffed rice is lightly roasted.
Garnish with chopped coriander leaves and serve.
