Heat oil in a pan and add mustard seeds, cumin seeds, fenugreek seeds, curry leaves, asafoetida and sauté for a few seconds.
Add chopped onion, tomato, green chilli, ginger, garlic and sauté for a few minutes.
Add turmeric powder, chilli powder, coriander powder, garam masala, salt, jaggery, tamarind paste and mix well.
Add curd and mix well.
Add 1 cup of water and bring it to a boil.
Simmer for 10 minutes or until the gravy thickens.
Garnish with chopped coriander leaves and serve hot with steamed rice.
