In a large bowl, mix together the all-purpose flour, baking powder, cumin powder, red chilli powder, garam masala, ajwain and salt.
Add the water and mix until it forms a thick batter.
Add the chopped onions, potatoes, tomatoes, green chillies, coriander leaves and spinach and mix until everything is well combined.
Heat oil in a deep pan over medium heat.
Drop spoonfuls of the mixture into the hot oil and fry until golden brown.
Remove the pakodas from the oil and drain on paper towels.
Serve hot with chutney or ketchup. Enjoy!
