Heat oil in a pan over medium heat.
Add cumin seeds, mustard seeds and fennel seeds and fry for a few seconds.
Add turmeric powder, red chilli powder, coriander powder and garam masala and fry for a few seconds.
Add onion, garlic, ginger and green chillies and fry until the onion is golden brown.
Add the mixed vegetables and fry for a few minutes.
Add salt to taste and mix well.
Cover the pan and cook for 10-15 minutes, stirring occasionally.
Add the chopped coriander leaves and mix well.
Serve hot with chapatis or rice.
