Heat the oil in a large pan over medium heat.
Add the cumin and mustard seeds and fry for a few seconds until they start to crackle.
Add the turmeric, coriander, red chilli powder and garam masala and fry for a few seconds.
Add the onion, garlic and green chilli and fry for a few minutes until the onion is softened.
Add the carrot, potato, green peas, cauliflower, green beans and tomatoes and fry for a few minutes.
Add salt to taste and mix well.
Cover the pan and cook for 10-15 minutes until the vegetables are cooked through.
Serve hot with chapatis or rice.
