mixed vegetables (such as carrots, potatoes, peas, bell peppers, etc.)

chopped fresh cilantro

Step 1:

Heat oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.

Step 2:

Add cumin, coriander, garam masala, turmeric, ginger, cayenne pepper, and salt. Cook, stirring, for 1 minute.

Step 3:

Add vegetables and cook, stirring, for 5 minutes.

Step 4:

Add tomatoes and water and bring to a simmer. Reduce heat to low and simmer, stirring occasionally, until vegetables are tender, about 15 minutes.

Step 5:

Stir in cilantro and serve.
