mixed vegetables (carrots, beans, peas, potatoes, cauliflower, etc.)

1 cup

onion, chopped

tomato, chopped

1 teaspoon

garlic paste

cumin seeds

1 teaspoon

coriander powder

1 teaspoon

garam masala

1 teaspoon

red chilli powder

1 teaspoon

turmeric powder

1 teaspoon

amchur powder

1 teaspoon

kasuri methi

1 teaspoon

oil

2 tablespoons

Salt to taste

Directions

Step 1:

Heat oil in a pan.

Step 2:

Add cumin seeds and let them crackle.

Step 3:

Add chopped onions and sauté until they turn golden brown.

Step 4:

Add ginger-garlic paste and sauté for a few seconds.

Step 5:

Add chopped tomatoes and cook until they turn soft.

Step 6:

Add all the dry spices (coriander powder, garam masala, red chilli powder, turmeric powder, amchur powder, and kasuri methi) and mix well.

Step 7:

Add the mixed vegetables and mix well.

Step 8:

Add salt to taste and mix again.

Step 9:

Cover the pan and cook on low heat for 10-15 minutes, stirring occasionally.

Step 10:

Serve hot with chapatis or rice.
