Rinse the split pigeon peas, split chickpeas, and split yellow lentils in a colander.
Heat the ghee and oil in a large pot over medium heat.
Add the mustard seeds, cumin seeds, dried red chilies, garlic, and ginger. Cook for 1-2 minutes, stirring frequently.
Add the onion and cook for 2-3 minutes, stirring occasionally.
Add the tomatoes and cook for 2-3 minutes, stirring occasionally.
Add the split pigeon peas, split chickpeas, split yellow lentils, cumin seeds, turmeric powder, red chili powder, coriander powder, garam masala, amchur powder, and asafoetida. Stir to combine.
Add 2-3 cups of water and bring to a boil.
Reduce the heat to low and simmer for 20-25 minutes, stirring occasionally.
Add salt to taste and stir to combine.
Garnish with fresh cilantro and serve. Enjoy!
