Methi Pulav, also known as Fenugreek Rice, is a flavorful rice dish made with fresh fenugreek leaves, basmati rice, and a blend of spices. Rinse the rice in cold water until the water runs clear. Soak the rice for 30 minutes.
Heat oil in a pan and add the cumin seeds.
Once they start to crackle, add the chopped onions and green chilli. Saute until the onions turn golden.
Now, add the chopped tomatoes and the spices. Mix well and cook until the tomatoes are soft.
Add the methi leaves and saute for a few minutes until they wilt.
Drain the rice and add it to the pan. Stir gently to mix the rice with the spices and methi.
Add 2 cups of water and salt. Cover the pan and let it simmer until the rice is done.
Once the rice is cooked, fluff it up with a fork.
Serve the Methi Pulav hot with raita or salad.
