Heat oil in a pan and add cumin seeds.
Once the cumin seeds start sputtering, add chopped onions and fry till it turns brown.
Add ginger-garlic paste and cook for another 2 minutes.
Add chopped tomatoes, coriander powder, turmeric powder, chili powder, and salt. Cook till the tomatoes turn mushy.
Now add the cleaned chicken pieces into the pan and mix well. Cook on medium flame for about 10-15 minutes.
Add curd and methi leaves to the chicken. Mix well.
Cook for another 10-15 minutes till the chicken is cooked thoroughly and the flavors have melded together.
Methi chicken is ready. Serve hot with roti, naan or rice.
