In a large bowl, mix together the plain flour, baking powder, baking soda, salt, ghee, oil, sesame seeds, cumin seeds, black pepper, coriander powder, red chilli powder, ajwain, sugar and curd.
Add water as required and knead the dough until it is soft and pliable.
Divide the dough into small balls and roll them out into thin discs.
Heat a tawa or griddle and place the rolled out discs on it.
Cook the mathis on both sides until they are golden brown.
Serve hot with chutney or pickle.
