Soak the rice and dal separately for 4-5 hours.
Grind them separately with little water till smooth.
Mix both the batter together in a large bowl, add salt and keep it in a warm place to ferment overnight.
To prepare the filling, heat oil in a pan, add mustard seeds and let it crackle.
Add the onions, green chillies and sauté until onions turn translucent.
Stir in the turmeric, mashed potatoes and salt, mix well. Remove from heat and stir in the chopped coriander leaves.
To prepare the dosa, heat a tava or non-stick pan. Pour a ladle full of batter and spread it thin. Cook till bottom surface turns light brown. Place a portion of the prepared filling in the center and fold the dosa over.
Serve hot with chutney and sambar.
