Heat oil in a pan.
Add mustard seeds, cumin seeds and asafoetida.
When the seeds start to crackle, add curry leaves and sauté for a few seconds.
Add red chilli powder, turmeric powder, garam masala powder and salt.
Mix well and sauté for a few seconds.
Add the papad and mix gently.
Cook for a few minutes until the papad is crisp and golden brown.
Garnish with chopped coriander leaves.
Serve hot.
